Recipe: Red Lentil Curry


This recipe is ridiculously easy to prepare and can be made in bulk and frozen. At just over £5 for all these ingredients, it’s perfect for dinner every night of the week!


1 red onion

2 cloves of garlic

2 tsp curry powder

1 tsp ginger

1 tsp salt

2 tsp garam masala

3 tbsp korma paste

1 carton chopped tomatoes

2 cups of red lentils

1 tin coconut milk

1 handful peas



Start by frying off the onion and garlic one a medium heat. Once they begin to soften, add in the curry powder, ginger, salt and garam masala. Stir the spices with the onion and garlic and add the korma paste when this is done. Things should be smelling pretty good by now. Add in the lentils, chopped tomatoes and coconut milk and keep it cooking for around 20 minutes. Add in a handful of peas during this time.


This recipe is the ultimate in friendly vegan cooking. Unintimidating, it can be adapted to suit any situation. Add in more veggies, different pulses or simply double to recipe to feed more.
