This unbelievably quick recipe makes for a mouth-watering vegan treat that requires just a handful of ingredients. In a few simple steps, you can whip up these pop tarts as a colourful breakfast, a light snack or a yummy addition to your lunchbox.
Puff pastry is a phenomenal ingredient, which feels fluffy and buttery, yet is completely plant-based and suitable for vegans. It’s the hot glue of cooking: it brings everything together and allows you to get creative with endless combinations. So here’s your chance to experiment with different fillings and go crazy with the toppings: fruit, spreads, nuts, sprinkles, sauces, spices, herbs… anything goes! It’s also a fun activity to get kids involved in.

For six pop tarts:
1 sheet of puff pastry
For the glaze:
30g icing sugar
1 dash of water
1 tsp cocoa powder (for the chocolate variant)
Cut the puff pastry in two long vertical strips, then cut 5/6 even rectangles from each strip.
Lay half of the rectangles on a baking tray lined with parchment paper and add your fillings. Place a second rectangle on top and seal the edges with your fingers or using a fork.
Bake at 180°C for 15/20. You’ll know they are done when they puff up nicely and get golden brown on top.
Leave them to cool then add the toppings.
Our flavour ideas
1) Chocolate & Coconut
Fill with dark chocolate and dried coconut flakes.
Drizzle some chocolate glaze on top and garnish with some more coconut flakes.
2) Pizza Marinara
Fill with tomato sauce, oregano, rosemary, salt and olive oil. You can take this to the next level with vegan cheese, tomatos and basil.
Top with a drizzle of olive oil and sprinkle with salt and pepper.
3) Sweet Walnuts
Fill with crushed walnuts and sugar.
Cover with the white glaze and top with finely crushed walnuts.
Fill with any flavour jam.
